Absolutely magic white chocolate stuffed pancakes

These very tasty pancakes are easy to make. They are pretty naughty but worth a special treat once in a while for afternoon tea, breakfast or a birthday party.

  • 2 cups of milk
  • 1 cap white wine vinegar
  • 2 eggs
  • 3 tbsp butter
  • 2 cups self-raising flour
  • ½ tsp of bicarbonate of soda
  • 1 pinch of salt
  • 3 tbsp sugar
  • 1 bar white cooking chocolate
  1. Pour the milk in a small bowl. Add the cap of vinegar. Leave it curdle.
  2. In a separate small bowl, lightly beat the 2 eggs with a fork.
  3. In another small microwavable bowl, melt the butter for 30 second then beat with a fork or whisk. Don't let it get too hot or cool it down. It shouldn't get a temperature shock with the milk or it will make butter nuggets ;)
  4. In a larger bowl, sift the dry ingredients (flour, bicarb, salt, sugar). Make a hole in the middle.
  5. Pour IN ORDER and each time quickly but lightly stir with a fork: curdled milk, eggs and butter.
  6. Keep the batter reasonably lumpy.
  7. Leave it to rest while your cut the chocolate in squares and you set the table. Prepare a serving dish.
  8. Heat a pan on medium (5 or 6 on my induction).
  9. Pour a small ladle of batter.
  10. Let it cook a little bit before placing a chocolate square in the middle.
  11. Cook it a little bit more and add a tiny bit of batter on top of the chocolate to cover it.
  12. Cook more and turn with a long and flat spatula.
  13. Make a batch and enjoy!
