This is a fantastic product I had to talk about in my {product review} series. It is cold smoked garlic. Still raw, it is used like any other garlic.
The glossy and golden garlic is smoked over Red Gum and Tea Tree chips for 48 hours.
The company selling it, called allsmoked.com says: “During the smoking process the garlic releases some oils, causing it to sweeten and take on a very delicate nutty, smoked flavour.”
The smell and flavour of this garlic is really exceptional. It’s not your average smoked garlic… it is very flavoursome. If you love smoky flavours and garlic, you need to try this.
There are numerous recipes you can think of, where you can switch your usual garlic for this treasure:
– garlic bread
– focaccia
– pizza
– pesto
– aïoli
– toum
– flavoured olive oil
– pasta
– garlic prawn
– mash such as aligot
– under the skin of roast chicken
– olive oil bread dip
– vinaigrette
– garlic prawn
– gratin dauphinois
– soup
– and absolutely anything with garlic…
You can keep it refrigerated in an airtight container or zipped bag (2 to 3 weeks). You can keep it also in a cool and dry place (1 to 2 weeks).
