This is a dish I make very often. “The simplest potato salad” is a typical left-over dish. A typical case of you making steamed or boiled potatoes for an army… Only you have three kids and a thin husband (like mine). All you need to do is place the left-over potatoes in a dish, covered, in the fridge.
The next day, when you’re ready to serve lunch or dinner, all you need to do is slice them, then drizzle a very good olive oil and wine vinegar (white or red), sprinkle a bit of salt and crack a good fragrant pepper. And there you have it: one of the best salads in the French repertoire.
If you don’t have any cold potatoes waiting in your fridge and want to try this recipe, simply cook potatoes (steam or boil) and put them in the fridge until cold, or even try this when they’re warm, it’s delicious too.
You can peel your potatoes or not. And last thing, it’s better when you salt the cooking water, and not necessary to add salt when you steam them. I prefer steaming because it preserves the taste and texture better than boiling. I use the metal steam basket of my Magimix Cook Expert and the 1 button steam program :) It’s very quick.

- firm, preferably small cooked potatoes, cold or warm
- a generous dash of fragrant olive oil
- a dash of very good wine vinegar (white or red)
- freshly cracked salt and pepper
- Cut the potatoes in 0.5cm thick slices.
- Add the oil and vinegar, salt and pepper.
- Toss delicately and eat.

It’s a non-recipe ;) Super easy but a good idea to have every now and then for a quick entrée.
I wish I had more leftover potatoes but they seem to go in a flash! And yes to a thin husband too. I don’t know where he stores them all :P
You can totally cook potatoes for this Lorraine :) I have, many times.
My thin husband does eat a lot too… It must be the bike riding :)
