This is a thermo-machine recipe which I prepared with my Magimix Cook Expert. You can use any other thermo-appliance.
Rum and raisin creamy rice pudding is a pretty simple recipe which requires soaking raisins or sultanas with nuts in boiling water and rum.
Choose a nice dark rum and don’t get bothered by vanilla pods, use the paste, it is cheaper in the end, because it keeps forever unlike pods which end up dry and mouldy.
If you live in Australia, the best arborio rice is actually one of the cheapest: the Woolworth brand. Most of the time, I use unrefined raw sugar. I love to use almonds and other seeds in this recipe: almonds, cashew, pumpkin or sunflower seeds.
- 600g milk
- 110g arborio rice
- 1tsp vanilla paste
- 35g sugar
- 40g almonds (or nuts and seeds mix)
- 40g raisin or sultana
- ½ cup boiling water
- 1 cap rum
- Place nuts and sultanas in a bowl. Pour rum and boiling water. Leave to marinate.
- Rinse rice until water is clear.
- Tip rice, milk, vanilla and sugar in the Magimix Cook Expert metal bowl.
- Select the EXPERT program: 30 mins / Speed 2A / 100°C (2A is an alternative speed).
- At 25 mins, tip nuts, sultana and its rum marinade.
- Serve!

EN FRANCAIS:
Riz crémeux rhum raisin
600g de lait
110g de riz arborio
1tsp de pâte de vanille
35g de sucre
40g d’amandes et leur peau (ou un mélange de fruits à coques et graines de type tournesol, courge, etc.)
40g de raisins secs
120ml d’eau bouillante
1 bouchon de rhum
Mettez les amandes et raisins secs dans un bol. Versez dessus le rhum et l’eau bouillante. Laissez mariner.
Rincez le riz à l’eau fraîche jusqu’à ce que l’eau soit claire.
Versez dans le bol en métal du Magimix Cook Expert le riz égoutté, le lait, la vanille, et le sucre.
Sélectionnez le program EXPERT: 30 mins / Vitesse 2A / 100°C (2A est une vitesse alternative).
A 25 mins, versez amandes et raisins avec leur marinade.
Servez !
